Lentil Dal
This is a delicious recipe, perfect for using up spare veg. Simple to make and comfortably serves 2 people. Takes approx. 40 mins to make.
Ingredients:
160g green lentils (don't get tinned lentils but do get ones that don't need soaking overnight)
140g white rice
1 x onion, chopped
2 x cloves garlic
1 x red pepper, chopped
100g green beans, chopped
1 pint of vegetable stock
1 tsp cumin
2 tbs mild curry powder
2 tbs olive oil
salt and pepper
To serve:
mango chutney
Method:
- Heat the oil in a wok
- Add the onion, garlic, cumin and curry power and fry for 5 mins
- Add the red pepper and green beans and fry for a further 3 mins
- Pour in the pint of vegetable stock
- Add the lentils and boil for 10 mins, then reduce to a simmer for a further 20 mins adding more boiling water if it starts to dry out
- While the lentils are cooking, heat a saucepan of salted boiling water and cook the rice according to directions on the packet
- When the rice is cooked serve with the lentil dal and mango chutney
