Mushroom risotto
This super simple risotto recipe is delicious if you love mushrooms. Serves one and takes approx. one hour to make.
Ingredients:
300g mushrooms, finely chopped
1/2 onion, finely chopped
100g risotto rice
1 pt vegetable stock
1 desert spoon oil
Method:
- Heat the oil in a saucepan on a medium heat
- Add the mushrooms and onion and allow them to sweat for 15 mins, keep the lid on
- Add the risotto rice and allow it to soak up the liquid for a couple of mins, be careful the rice doesn't catch on the bottom of the pan
- Gradually add the pint of stock, stirring regularly over 40 mins (or however long your risotto rice takes to cook) until it is all soaked in
- Enjoy!
