Spaghetti Bolognese

I was super craving some comforting pasta last night so I made one of the first recipes I ever learnt, spaghetti bolognese! Serves two and takes approx. 30 mins to make.

Ingredients:
150g gluten free pasta (75g per person)
1 x large tomato, chopped
50g runner beans, chopped 
1/2 large onion, diced
50g sweetcorn 
150g closed cup mushrooms, chopped
300g tomato sauce 
20g cheese, grated
Salt, pepper and oil 

Method: 
- Fry the onion in oil for approx. 5 mins until browned 

- Add the chopped tomato and mushrooms and fry for another couple of mins 

- Add the tomato sauce, runner beans and sweetcorn and fry for 20 mins on a medium heat 

- While the sauce is cooking, boil the pasta in salted water for the required time on the packet - I find gluten free pasta sticks together and regular stirring helps to reduce this

- Drain the pasta and serve with the sauce

- Grate the cheese on top to finish
