Veggie baked potato

This is a super simple, easy baked potato recipe and a perfect way to incorporate some veggies. Serves one and takes approx. one hour to make. 

Ingredients:
1 x large potato 
25g green beans, finely chopped 
1/2 red pepper, finely chopped 
1/2 onion, finely chopped 
50g cheese, grated
Salt, pepper and oil 

Method:
- Pre-heat oven to 220°

- Prick the potato with a fork several times and microwave for 3 mins 

- Bake in the oven for 40 mins 

- After 30 mins, fry the onion in oil until browned and parboil the beans to soften them

- Remove the potato from the oven and slice in half, then scoop the soft middle out into a mixing bowl

- Mix the drained beans, pepper, fried onion, salt and pepper and about 10g of grated cheese together in the bowl 

- Spoon the mixture out of the mixing bowl and into the crispy potato skins
 
- Grate the remaining cheese on top and return to the oven for 20 mins
