Gluten-Free Banana Bread!
I decided to jump on the bandwagon and make a gluten-free banana bread! Takes approx. 1.5 hours to make.
Ingredients:
115g butter
170g granulated or caster sugar (you can also mix in some demerara sugar if you have some)
220g gluten-free, self raising flour (for this recipe I used 'Freee' flour)
2 x eggs
2 large, or 3 medium, very ripe bananas
Method:
- Pre-heat the oven to 180°C
- Using some butter (the left-over wrapper from a pack is perfect for this) grease a 2lb loaf tin and line with baking paper
- Peel and mash the bananas with a fork in a bowl
- Cream the butter and sugar together and then gradually mix in the two eggs
- Mix in the mashed bananas
- Gradually mix in the flour
- Transfer the mixture into the loaf tin and sprinkle some caster/granulated/demerara sugar on top
- Bake for 40 mins
- Lower the temperature to 150°C and bake for a further 30 mins
- Let it cool and enjoy!
