Two-ingredient banana pancakes
This is the perfect recipe if you want to make pancakes but you can't get find any flour!
Makes approx. 5 medium sized pancakes and takes about 20 mins to fry.
Ingredients:
2 x medium eggs
1 x over-ripe banana
Butter to fry
For the topping:
Honey or lemon and sugar!
Method:
- Peel the banana and using a fork mash it in a bowl until it has a thick, creamy texture
- Crack two eggs into the same bowl and using the fork, thoroughly mix together
- Melt the butter in a frying pan on a medium heat
- Slowly pour half a ladle-spoon of the mixture into the pan
- Fry until solid and flip so that both sides are browned
- Repeat until all the mixture has been fried, re-stirring the banana and egg mixture before each ladle
- Serve with honey or lemon and sugar
